Blood oranges are in season. Their juice is good mixed with campari or aperol and fizzy white wine (to make a Baby Joe). Or keep it simple and copy the River Cafe who simply add a small amount of prosecco to make a refreshing aperitif. The precious – and most expensive – ingredient here is actually the juice of the sanguinello and not, for once, the booze. It deserves showcasing. So only add as much wine as you need for fizz – more or less 50-50 should do the trick. Practically a non-alcoholic health drink….
